Recipes using Fresh From the Farmer's Market vegetables.
Just for DeEtta (SHS):

Penne with broccoli sauce

2 tbsp pine nuts
½ lb broccoli crowns
16-18 fresh basil leaves
1 garlic clove, thinly sliced
2 tbsp heavy cream
6 tbsp freshly grated parmesan cheese
salt and freshly ground black pepper
1 lb dried penne

Preheat oven to 325 degrees. Toast pine nuts on baking sheet until golden. (12-15 mins) and cool. Bring a large pot of salted water to a boil over high heat. Add broccoli and cook 2 minutes, then transfer with tongs to a sieve and drain well. Reserve the boiling water for cooking the pasta.

Cut broccoli into large chunks and place in food processor with basil and garlic. Process until finely chopped. Stopping to scrape down the sides of bowl, once or twice. With motor running, add olive oil and cream through feed tube, processing until mixture is well blended and finely chopped. Transfer mixture to a bowl and stir in cheese and salt and pepper to taste.

Add pasta to the same boiling water used to cook the broccoli. Cook until al dente. Just before pasta is done, remove 1 cup of the boiling water. Whisk enough of the water into the broccoli mixture to make a sauce that will coat the pasta nicely.

Drain pasta and return it to pot. Add about two-thirds of the sauce and toss well. Add more sauce, if desired and toss again. Serve on warm plates.



Cauliflower and Potato Soup with Cilantro

2 tbsp olive oil
1 large onion, thinly sliced
2 cloves of garlic, minced
¼ c chopped cilantro
1 lb cauliflower florets
1 baking potato, peeled, in ½ cubes
2 cups homemade and canned low-sodium chicken broth
salt/pepper
1 cup milk

Heat oil in large pot over moderate heat. Add onion and sauté until soft and sweet, about 10 minutes. Add garlic and cilantro and sauté 1 minute to release garlic fragrance.

Add cauliflower, potato, broth, 3 cups water and salt and pepper to taste. Bring to a boil, then cover, adjust heat to maintain a bare simmer and cook until vegetables are tender, about 30 minutes.

Puree in food processor or pass through a food mill. Return to a clean pot and stir in milk. Reheat to serving temperature. Taste and adjust seasoning.
