People that know me, know that I am a little um, obsessed, with Julie Andrews, in particular Sound of Music, Mary Poppins and such. My mom and I were blessed to see her last year here in Atlanta, and oh what a treat it was. Here are some very creative people that takes a GREAT song and adds to it! I had this on Facebook for quite a while and forgot to post it to my blog. So here it is:

There are several blogs that I like to frequent, especially when it comes to recipes. I am ALWAYS looking for ways to change things up a bit, try new things or make others better. In my search, one of my sites that I love, had a different variety of recipes for waffles. I searched, I read and I looked at the comments. The Favorite recipe, seemed to be this one that I am about to post. I made it last night with a HUGE hit! I hope you guys enjoy it. I know we did! I have made changes to the recipe with the things that we use here at our home.

Delicate sugar-free waffles with a light buttery taste

Yield: 2-3 Servings (you will need to change this recipe according to your family size. I made 2 servings last night (for dinner, yahoo), and it made about 10-11, round waffles.)

Ingredients:
2 c sifted hard white flour
4 t baking powder
1/2 t salt
2 eggs, separated
1 1/4 c milk
6 T butter, melted

Instructions:
1. In mixing bowl, sift together the flour, baking powder, and salt.
2. In separate bowl, beat egg whites until soft peaks form.
3. In another bowl, beat egg yolks with milk. Add melted butter to egg mixture and stir. Add flour mixture also, stirring to remove most lumps. Finally, fold in egg whites. (I whipped my egg whites up ahead of time and put them into a bowl. Then I mixed the other items in the bosch).
4. Cook on pre-heated waffle maker until browned. Top with butter and jam or syrup of your choice.

* (Berry)Strawberry Syrup (I changed this from the original to add different berries that I had. VERY yummy!!):

1 c whole Strawberries (loosely packed)
1 c Blueberries
1/8 c sucanat
1 t cornstarch (disolved in a little water)

Cut strawberries into halves or quarters (depending on preference; if the strawberries are fairly small you may leave them whole). Place strawberries in a saucepan and pour sugar on top and place on burner set between medium and medium-low. The mixture will slowly become watery at which point you can set the burner to medium. Once the mixture begins to boil add disolved cornstarch while stirring the mixture. After boiling for 1-2 minutes (remember to continue stirring) you can remove from the burner. The syrup can be used hot or can be refridgerated and used cold, depending on preference.

We recently had a wonderful sample of a meal that our neighbor made. She made sauteed Pork Loin and I called her to ask her how she did it. I was VERY surprised when she told me how simple it was. The first thing she did was to take the Pork Loin (in a roll) and cut it in 1/2 and she puts them in the freezer (We wait until it goes on sale for $1.99/lb at Kroger and buy a couple of them). She turns on a pressure cooker and puts a little oil in the bottom. She sears each side and then pours 1 can of french onion soup on top of it. She then cooked it for one hour in the pressure cooker. So I decided to try it, but was FLABBERGASTED when I looked at the store and realized that French onion soup in a can was $1.79!! UGH! I looked at the ingredients and for about .75 was able to make it at home. I had a can of Beef Broth (It could have been cheaper with boullion, but anyway) and 1 package of onion soup mix. Mix those together and let them set overnight. That is IT! You cook it frozen in the pressure cooker for about an hour (if it is thawed, it will be about 30-40 minutes). We had our pork loin with small red potatoes, salad from our garden and these homemade yummy yeast rolls. Enjoy this version of our Tempt your Tummy Tuesdays with Recipes.
