We recently had a wonderful sample of a meal that our neighbor made. She made sauteed Pork Loin and I called her to ask her how she did it. I was VERY surprised when she told me how simple it was. The first thing she did was to take the Pork Loin (in a roll) and cut it in 1/2 and she puts them in the freezer (We wait until it goes on sale for $1.99/lb at Kroger and buy a couple of them). She turns on a pressure cooker and puts a little oil in the bottom. She sears each side and then pours 1 can of french onion soup on top of it. She then cooked it for one hour in the pressure cooker. So I decided to try it, but was FLABBERGASTED when I looked at the store and realized that French onion soup in a can was $1.79!! UGH! I looked at the ingredients and for about .75 was able to make it at home. I had a can of Beef Broth (It could have been cheaper with boullion, but anyway) and 1 package of onion soup mix. Mix those together and let them set overnight. That is IT! You cook it frozen in the pressure cooker for about an hour (if it is thawed, it will be about 30-40 minutes). We had our pork loin with small red potatoes, salad from our garden and these homemade yummy yeast rolls. Enjoy this version of our Tempt your Tummy Tuesdays with Recipes.

One thing that my family LOVES to do is to have cookie dough on hand and to bake fresh. One great way to ensure that to happen, is to make multiple batches, put wax paper on a cookie sheet and put your cookie dough, with a cookie dough scooper on there and freeze. Then we take the cookie dough balls, and put about 18 balls, in a quart bag, and put it back in the freezer. That way, we can pull as many out as needed.




Today I made 4 batches. You bake at 375 *I like 350* for 8-10 minutes. I just made a chart and did this batch 4x.(this recipe is for 1 batch)

2 1/4 c flour (I used soft white wheat)
1 tsp salt
1 tsp baking soda
3/4 brown sugar (I used Sucanat)
3/4 granulated sugar (I used sucanat with honey or sucanat crystals)
1 c soft butter (I use real butter)
1 tsp vanilla
2 eggs
12 oz chocolate chips
1 c chopped nuts (I used walnuts)

Use up the bounty of Zuchinni from your garden with this great soup! We were also able to find potatoes (5lb) for $2.50 at Kroger. The cost of this meal: less than $1!! We also used up parmesean bread we had yesterday at lunch.

Zuchinni and Potato Soup

1 Large Zuchinni (8 cups)
5 potatoes (ours were russet)
1 can of evaporated milk
minced onion (I didn't have but reconsistuted dried)
2 tbsp of oil
2 tbsp butter
4 cups water
1/4 c parsley

Sautee onion in butter/oil. Add 4 c water and boil zuchinni until soft (you should have taken the skin off of the zuchinni and quartered it). In a seperate pot, boil your potatotes. After zuchinni mix is soft, put into blender to make puree. Add puree, parsley and milk to pot. Skin potatotes and quarter. Add to soup.

Enjoy! It is hard for my boys to eat veggies so this was GREAT and they didn't even know the base was milk/zuchinni, lol. Even dh loves it, which is hard to do with some veggies!
