Use up the bounty of Zuchinni from your garden with this great soup! We were also able to find potatoes (5lb) for $2.50 at Kroger. The cost of this meal: less than $1!! We also used up parmesean bread we had yesterday at lunch.

Zuchinni and Potato Soup

1 Large Zuchinni (8 cups)
5 potatoes (ours were russet)
1 can of evaporated milk
minced onion (I didn't have but reconsistuted dried)
2 tbsp of oil
2 tbsp butter
4 cups water
1/4 c parsley

Sautee onion in butter/oil. Add 4 c water and boil zuchinni until soft (you should have taken the skin off of the zuchinni and quartered it). In a seperate pot, boil your potatotes. After zuchinni mix is soft, put into blender to make puree. Add puree, parsley and milk to pot. Skin potatotes and quarter. Add to soup.

Enjoy! It is hard for my boys to eat veggies so this was GREAT and they didn't even know the base was milk/zuchinni, lol. Even dh loves it, which is hard to do with some veggies!
