RECIPIES:

One of my friends had posted a recipe for this one but I wanted to pass along my version, which is a little different than hers. It definitely saves quite a bit of money.

Cream Soup Mix
2 c dry milk
1 ¼ c cornstarch or flour
¼ c chicken boullion
2 tbsp dried onion
½ tsp pepper
1 tsp thyme
1 tsp basil

Add broccoli, celery or mushrooms. Mix and store.

To make: Corstarch: 1/3 c mix to 1 ¼ c water Mix on stove until thickened

Flour: ½ c mix to 1 ¼ c water. Mix on stove until thickened like gravy.


What we are having for dinner:

Potato Cheese Soup

6 potatoes, diced and peeled
16 oz Velveeta cheese (about ½ of a block)
6 slices of bacon
1 onion, chopped (I have used dried onion, reconstituted too)
1 carrot, diced
1 tsp basil
1 tsp salt
1 tsp pepper
1 tsp thyme

Place potato pieces in large pan with just enough water to cover them and boil. Cut up carrot and add to potatoes. Cook bacon until crisp. Saute onion in bacon grease (you don’t have to do this if you don’t want and we have been using turkey bacon for a while now, which doesn’t give off any grease. You could use butter as an alternative). When potato and water thicken, and veggies are soft, add herbs and spices. Crumble bacon and add onion. Before serving, crumble cheese and add until melted.

This is one of our favorite cooler weather meals.
